Heading in the right direction

So today I took a day off. I took the kids to daycare and headed to a friends house. We drove to Galt to the flea market, then headed to Joanns (my favorite store), goodwill, a scrap store and Target. We had a good time despite not finding anything to exciting.

In my old world there would have definitely been a stop at Starbucks before we headed out, but NOT TODAY! WOOT! I was worried not being home or at work to eat my meals planned for the day, but I did GREAT! I ate my oatmeal and shake before the gym (where I did 30 mins of cardio), had my toast right after I went....then packed a protein shake, some turkey and and an apple for the outing. I got home around 1, ate my tuna sandwich, 1 meal replacement bar for snack and for dinner made turkey tenders and brown rice with spinach and feta. I posted the recipe because it was tasty and I am not a brown rice fan!

Dana's spinach and feta brown rice (biggest loser cookbook)

1/4 cup chopped sweet onion (I didn't use that much, but make sure to use it adds great flavor)
1 tsp minced garlic
1 cup cooked brown rice (I used the Uncle Ben's orange bag, that cooks in the micro in 90 secs)
1 cup chopped fresh spinach leaves
3 tbs (about 3/4 oz) crumbled fat free feta cheese
Salt and black pepper to taste

Lightly mist a small nonstick skillet with olive oil spray. Set over medium heat for 30 secs. Add onion and garlic. Cook, stirring occasionally for 4-6 mins or until tender, not letting it brown. Add the rice and spinach. Cook, stirring constantly for 3-5 mins or until spinach is almost completely wilted. Stir in the feta cheese. Season with salt and pepper and serve immediately.

Makes 2 servings (1/2 cup)
